More and more I’m finding myself figuring out the kitchen life. Since buying the house, I made one of my goals to get in the kitchen more and learn new recipes. The one thing that kept me from cooking was honestly trying to follow crazy long recipes. So, I decided I’m going to get inspired by others but create my own simplified version.
I like to keep it as fresh as possible when I cook as well. No frozen products and as fresh as possible when it comes to produce. I’ve had the opportunity to work with Fresh From Florida for a few months now and today I’m bringing you my chicken and peppers recipe. Bell Peppers are currently in season in Florida, meaning this recipe is at it’s peak. I’m pretty accustomed to purchasing products with the Fresh From Florida label on it, and get so excited when I see other people serving them up as well. The flavor and smell is always amazing and the quality is even better.
Chicken and Peppers Recipe:
Yields: 4 meals
1 LB Chicken Breast
3 Fresh From Florida Bell Peppers
1/4 C Rice
1/2 C Vegetable Stock
1/3 Tomato Sauce
Yellow Onion
1 TSP Minced Garlic
1 TBSLP Oil
Salt + Pepper
- In a large pan, heat up oil, add Chicken and cook through. Add any seasonings, salt & pepper.
- Once chicken is cooked, remove from heat.
- Using the oil left over in the pan, sauté minced garlic, chopped onions and Fresh From Florida Bell Peppers for about 3 minutes
- Add vegetable stock, tomato sauce and rice.
- Stir and let simmer for about 20 minutes
- After rice is cooked, add the chicken back in for about 10 minutes to add in the juices and heat back up.
- Serve or portion for lunches (that’s what I do!).
So easy, right? Keeping it simple is the way to go. I wouldn’t call myself a girl on-the-go, but I do have a lot going on between working full-time and running Arrows & Awe. Therefore, any way that I can cut time down, create the least amount of dishes (this is done in ONE pan) and have a healthy meal – I’m all for it.
Florida Farmers make it really easy to eat fresh produce year-round. Look for food, produce, seafood and especially bell peppers labeled From From Florida. Also in season are squash and sweet corn! Look for the FFF label so you know it’s good.
